Hmmm well.

You could do garlic and onion string beans (much better with pork as well, but...not vegan).

A nice pot of yummy baked beens.

Some delicious home made mashed potatoes (If cheese is allowed, I have a great recipe for backed potato pancakes...it's like potato lasagna (no sauce, just cheese and breadcrumbs...and potatoes hehe).

Brussle sprouts roasted with a bit of oil and spices.

Maybe a really yummy Brocolli based soup as well (mushrooms/onions/carrots/spices + veggie broth + blended brocolli....some like cheese as well if it's allowed (I don't).)

Sadly most of my delicious dishes involve meet, so I can't help that much.

Cheese that comes from animal milk is not vegan.

Though you can find plenty of vegan cheese made from plants.

Honestly, just throwing together a mixed pile of veggies can make some easy delicious, easy food.

Potatoes, carrots, cucumber, onions, and maybe some mushrooms. Cook it in some olive oil, throw in salt and pepper, some chili peppers, and whatever else you're interested in.

I don't mean to be presumptuous, but I think just trying would matter most of all.

I was making my partner Thai green curry for the first time and I used probably 10x the paste I should have

It was a Thai brand with an English translation sticker

I think my stomach still hurts weeks later

I think Indian food as a whole is the only way I would stay sane if someone held a gun to my head and made me go vegan. So much good stuff where you don't miss the meat at all.

In general dishes with beans, mushrooms, chickpeas, lentils, potatoes, etc.

All about using spices correctly to make stuff enticing. :P

Quinoa lightly roasted in olive oil, with cumin, paprika, turmeric and coriander. Add red bell pepper, serrano pepper, chopped onion and garlic. Stir and saute until soft. Add vegetable broth, frozen corn and simmer. When most of the liquid is gone, add cooked black beans and sunflower seeds.

Serve hot or cold.

I'll usually top it with grilled chicken.

This line of thought extended would suggest no food at any restaurant serving animal products could ever be vegan

While I won't defend carnivorous or plant based diets, I went vegan for the most part, 99%, because of the documentaries I'd watch (probably at least 30) that show what happens in the meat and dairy industries.

There is no possible way to meet the profit margins that they do without a severe cut in health standards. If I eat ANY meat products, its coming from somewhere as local and "organic" as possible. I cut dairy out completely for different reasons entirely.

But yeah, the meat *industry* is the reason I went plant based. My mental health and physical system feel cleaner in ways I never would have imagined until I tried it for years. Makes a difference.

I won't argue with people about what works best, but it's definitely worked for me.

Restaurants are super accommodating nowadays around me at least

My wife heard about some burger restaurant but she seemed kind of bummed because she thought they wouldnt have anything for me to eat there, but when I looked up their menu they had an entire vegan section
