For one thing, the rabbit stuff is filler from what I recall.

Secondly, Roshi blew up the moon even before that during the first tournament.

And yes, Piccolo did in fact blow up the moon again, somehow, at a later date.

Toriyama can't even keep track of his own characters; don't expect him to keep track of the goddamn moon.

1) Yep, as Andromicus said, Monster Carrot was in the manga and is canon. Heres an image of him turning Bulma into a carrot:

2) You are right, Roshi did blow up the moon during the 21st Budokai. Goku has turned into a giant ape, so Roshi took out the moon to save everyone.

3) Goku mentions during the 23rd Budokai that Kami had both restored the moon and permanently removed his tail. Piccolo would then later destroy the moon when Gohan turned into a giant ape during his You need to stay alive for 6 months ordeal.

4) Toriyama actually did a good job of keeping track of things during DB/DBZ. Later on... not so much.

I've only watched it on Adult Swim and I think they took out the filler ep's.
