I recently found out that I am friends with an adult child who needs to cut up their entire steak into bite-sized pieces before they will eat their steak dinner.

I need to know how common this technique really is...

This isn't a preference thing. It's literally an etiquette rule that you're only supposed to cut one or two pieces off at time. If you chop up your whole steak before eating, it's the same as keeping your elbows on the table, slurping soup, or chewing with your mouth open.

put a bunch of ketchup on it to moisten it up and make it easier to bite

If I make a steak I let it rest then cut it into thick slices that run the width of the steak. If I get one at a restaurant or someone else makes them I just cut one bite at a time.

Slurping soup and chewing with your mouth open make offensive and gross noises. Cutting more pieces than you can chew within some arbitrary amount of time is ... well, just violating some arbitrary rule about how you're "supposed" to eat.

tbf if I'm at a formal event I will only cut off one or two pieces but if I'm at a restaurant with friends I'm gonna cut it off more of it as I eat. So I guess I'm really somewhere between (because I don't just cut it and then eat it).

Ive never heard of or seen this, so its definitely NOT comparable to mouth open chewing or slurping.

Look I'm not gonna lie, if I'm at home by myself sometimes I just cut the steak into bite sized pieces and put it into a bowl with my pre-cut up vegetables so I can sit on the couch and hold the bowl in my left hand while using my fork with the right hand like subhuman filth >_>

But if I'm at a restaurant or have company I'll eat like a normal human being

At a restaurant or with someone that doesn't make tortillas for their meals? Fork in left hand and knife on the right like a civilized person
