In vanilla there is a heavy armor perk that increases unarmed while wearing heavy gauntlets. There are also enchanted gauntlets in Riften that increase unarmed damage. They can be disenchanted too to learn the fortify unarmed skill. So with a higher enchant and the heavy armor perk, unarmed can be used. You'll also want Khajiit or Argonian as well because they have claws that do extra unarmed damage. The unarmed kill cams are great, especially the one where you hit em with a suplex. But it might have just been due to the fact that I was young when I played it and it was also the first game of that genre I've ever played.
