In vanilla there is a heavy armor perk that increases unarmed while wearing heavy gauntlets. There are also enchanted gauntlets in Riften that increase unarmed damage. They can be disenchanted too to learn the fortify unarmed skill. So with a higher enchant and the heavy armor perk, unarmed can be used. You'll also want Khajiit or Argonian as well because they have claws that do extra unarmed damage. The unarmed kill cams are great, especially the one where you hit em with a suplex.

I know one of the big perk overhaul mods, Ordinator Perks of Skyrim, includes a good number of perks that help with unarmed.

Redguard who uses a earhammer as your primary weapon, normal clothes but you can use heavy armor masks, boots, and gloves, werewolf, you can steal but if caught you have to fight to the death, murder of NPCs is only allowed if they catch you (meaning no killing anyone who joins in the fray afterwards)

No sneaking or use of magic and that includes alchemy
No archery

You can use the ritual or the tower standing stone power
Can only use elemental shouts
Your follower can be Eola

No doing the civil war questline, kill the brotherhood, join the companions, side with the dawnguard

I made an unarmed build in vanilla skyrim.

I can punch ancient dragons/trolls/etc to death.

But I had to double enchant everything to be able to do so.

A weapon based build does WAY more damage.

Unarmed is weak in comparison, you are going to be gimped compared to any other style of combat but it IS doable.

Yeah don't get me wrong, I recognize it's an issue for most people. But it might have just been due to the fact that I was young when I played it and it was also the first game of that genre I've ever played.

Skyrim wasn't bad at all but it didn't really captivate me the same way Oblivion did.
