I've never played any, but I want to give this upcoming one a shot. Could I get by with watching some youtube summaries? Are these games somewhat standalone? I have no idea how deep the story is or anything really about these games

They are extremely connected. The first one may not have aged well. It's been a long time. 2 is still the best in the series and 3 is very good as well. The first is pretty short so you might as well go through it.

Ascension is the weakest in the series. Not bad just meh. The psp ones are decent. Especially the second.

It's basically a background story. Only Kratos and his experiences carry over.
