More explanation for what I mean. I watch a lot of cooking stuff in my spare time because I like to cook. I suck, I can probably only make three dishes very well out of... how many are in the world? But I try, because I like to.

I like to make Indian, Mexican and American-Cajun recipes the most because of their diverse flavors, spice, and seasoning. But whenever I see some hands-only gif recipe, or even Babish, the flavor profiles are always salt and pepper. And tons of it. "Liberal amounts of sea salt, coarse freshly ground black pepper." If I hear that phrase one more time, I'm gonna lose it. If it includes beef, veal, or any other red meat that's usually it.

Why? No one likes a good seasoned burger patty? No one likes a blackened steak and or chicken breast? No one likes spicy ass kebab? I know this is random but I feel like salt and pepper are far from the only options you have to make a good dish, and the internet is alight with tons of bland ass recipes.

Because they are easily available, everyone has them, and it's pretty easy to tell if you've added to much or too little.

It's like your picking up Dr Seuss books and wondering why there aren't complex linguistic techniques being employed.

Find better recipes. Even allrecipes.com would turn up better recipes than what you're describing.

Better yet, look into the common spice combinations and usages on your preferred ethnicity's cuisine, learn what those individual spices and flavours accomplish for the dish, and apply your knowledge to improve the bland recipes you're encountering. It's cooking, not baking; you can go pretty far off the road map if you know what you're doing.
