I know in the old days they say "you can achieve anything you put your mind to!", but that never works in the real world

People who suck at sports or have weight issues will likely stay that way for life. Same if they aren't educated or poor. If things are tough, most people quit or find an easy way out, it's natural. Finding an easy way out is one of my good qualities

Think of videogames, if it's too hard, they have ways to make it easier, or have the game help you. I usually utilize those always. Or just quit if a game is too hard, like the souls series.

Nah. Humans can achieve most things they put their minds to, problem is most humans are too lazy to do anything useful with themselves.

I agree! I am VERY lazy and currently don't do anything useful and contribute nothing. Then again, my main goal is surviving to the next day and having fun and being happy.

Adversity isn't really what you are describing there, and I don't think that people really praise it in that sense.

Adversity is good up to a point. Challenges drive people, but impossible challenges drive people under. It's a balancing game, but a mindset that any goal is achievable through perceverence is generally more useful than the opposite, and we can't perfectly predict what is and what isn't an impossible goal, so it's more about the mindset of the person than the actual adversity they face.
