Im trying to make some Spicy Ahi Poke but I forget if fish is supposed to be cured using salt water or lemon juice.

And how can i make perfect fluffy white rice from a stovetop pot?

I haven't, but from what I understand, the key is to buy sushi grade fish to begin with. Supermarket fish just won't cut it. Sushi restaurants generally buy from nearby fish markets with a specific quality of fish in mind.

I have made sashimi and used sushi grade yellowtail. It was delicious and we didnt get sick. You need to use sushi grade fish though.

don't you cut off a thin outer layer because the layer underneath is untainted and safer to eat raw?
never made sushi, just parroting what I read elsewhere a few months back.
