Lets say you have a person fully trained in necessary medical fields with access to all top notch equipment and medicine. That person is tasked with cutting apart their own body and eating themselves.

A person can remove both legs, one kidney (both if dialysis is available), one lung, whole stomach, 75% of the liver, spleen, gallbladder, colon, appendix, entire reproductive system, one eye, one hemisphere of the brain (left side if keeping right arm and right eye and vice versa), and one arm and still live without too much medical intervention.

but to answer your question, I think you'd be able to at least eat more than 50% of your body weight.
If you're fatter, you can eat even more since you can just liposuction your fat and eat that too. It probably depends on how fat you are. If you were 300+ pounds you could probably do liposuction and live off of that for months at least.
