I want to do something with quinoa never really used it in food, I've had it before and I like it.

So my plan become to make some very spicy chicken thighs in the oven with some crispiness to them, with roasted red bell pepper and zuccini maybe onion too as a side, then add a cooling creamy sour-cream avocado pur that has lime and cilantro in it.

I'll have some cilantro mixed in the quinoa as well.

cilantro can be omitted. I used to hate it too before, but I learned to love it.

Made too many topics again, can't make my own topic of it. I'll do it later, but anyway. Turned out fucking awesome!

I messed up with the presentation a bit, the chicken should've been more of a front figure.

It's panko-breaded oven baked chicken tights with hot Mexican spices and marinade, with red quinoa and a cooling avocado sour-creme sauce with lime and cilantro and some roasted bell pepper and zuccini as a side.

It turned out so fucking good and so tasty, everything melded together so well. I came up with the recipie on the spot while buying things at the store.

You can omit or replace the cilantro with maybe parsley if you hate cilantro.

But I have to ask, how much are those off-season vegetables for you.
And do you know where they come from? For me it's usually California or Mexico.
For Tomatoes, it tends to be Hydroponic stuff locally or from Vermont or Canada.

Honestly I didn't check, really doubt any of them were locally in season anyway.
