2 first times, got it too thick, this time too thin and it was still foamy for some reason. But taste has improved every time.

The temperature thing is not the problem, it's more of the other things. I think what went wrong now was I had more of the vinegar reduction in it that before, and I think I used bit less butter as well, so I should've had more butter.

Either way it was tasty.
