I know they called themselves humans in the Episode 2. But were they always just humans? It just seemed at that there are humans in a Galaxy far far away.

Its possible that human life on earth( in Star Wars canon assuming you take the in long time ago in a galaxy far far away literally) was some kind of deep space colonization effort that didnt go so well and anything known about the old galaxy survived only as a story.
