Being hidden is one of their best ways of not being caught. If they went around overusing the force they'd be outed and likely killed pretty quickly.

Because that's the difference between the Jedi and the Sith. The Sith abuse and ultimately become corrupted by their power, the Jedi order teaches you to keep all that shit in check.

But even then, can't say in the movies or anything I've ever seen a Sith just straight up spam the force either. It's the same occasional force choke, lightning, force push, lifting, etc.
I guess in the prequels Dooku or whatever his name was was willing to spam it a bit.

Which is why I stressed "almost". Also, the force certainly can absolutely be lethal(force choking?) and guns don't have to be lethal(shooting in the arm).

I don't see why Obi-Wan didn't just toss Grievous off a cliff. Or why Qui-Gon didn't just toss droids around like ragdolls.

Technically, Grievous wasn't explicitly Force-less. We also don't know that he didn't have some sort of jetpack or something to prevent that.

It's been awhile, but don't they constantly throw around debris and enemies in the prequels? Also, why would they do that when they can literally throw the Droids bullets back at them?

That would have been fucking awesome. Instead of the "brush your shoulders off" bullshit, he should have fucking destroyed them. But he wasn't actually there, so you know, it would be going too far. Regardless, the fake out was just used in Iron Man 3, so it wasn't that great in hindsight.
