The original trilogy, Unicorn, 08th MS Team are all good starts for UC. SEED and 00 are okay for non-UC.

I wanted to get into gunpla at one point. I even bought some starter set that came with the original Gundam and a Zaku II (my favorite mobile suit) but never bothered putting them together.

Most Gundams are at least watchable save for Age and the later parts of Seed Destiny so you might as well just watch each era chronologically and decide for yourself which ones you like best

All I know about Gundam is that Rinko is an A+ milf

I'd say wing is the least gundam like series of them all but then the direction of the franchise changed in writing style and tone. It marked the transition to the modern gundam series.

For UC timeline:

0079 > 08th MS Team > 0080 > 0083 > Zeta > Char's Counter Attack > Unicorn Re: 0096

If you don't mind subtitles, you could add ZZ after Zeta, F91 after Unicorn, and Victory after F91. They all follow the same continuity and that is the chronological order.

If you want to branch out of that, I've seen and liked these:

G Gundam
Gundam Wing
Gundam 00

I haven't seen Seed, Seed Destiny, Age, X, Turn A, or Iron-blooded Orphans yet.

I really should watch more of them. I only watched a bit of Wing back in the day as many did. I've played the SRW games a fair amount too, and enjoyed them.

X is pretty good, SEED is underrated and Destiny isn't as bad as people say. Turn A is slow going but the animation is fucking gorgeous. Honestly, F91 is actually a strong candidate for a first title if you don't mind bad pacing.
