I wonder what I'd make then.

I think I'll have Tacos Al Pastor as one. Can prep the meat beforehand I think, a more normal taco, a quesadila. Also vegan version of something, some bean thing.

Change the menu when needed, but not have too much food to choose from.

Because authentic mexican food is not a thing here. We have mexican food but it's not authentic.

Reason I want to do mexican is because they have lot of streetfood- and foodtruck friendly food that's not just "fast food", also I'm sure it would also think there would be a demand for it. Tho it might get expensive, since lot of authentic stuff I can't buy in normal stores gotta buy it online from an importer.

I mean there is no way to get authentic 100% corn tortillas, they are always mixed with flour. And to get cornflour can't find it normal stores.
