Usually rare. I've tried blue rare before but it might be a bit too raw for me. I might start to go back to medium rare though as rare sometimes lack that sear edge.

Medium.

Although if I eat out, I tend to say Medium Well, only because that way I get it served as Medium 80% of the time. If I tell them I want it Medium, I tend to always get Medium-rare and that, I don't like.

I'll go raw, blue, or rare if I harvest the meat myself (or get it butchered locally from a trusted person). I don't trust restaurants to safely store meat at a level that would be acceptable to cook anything under medium-rare.

Go hunting or make friends with a farmer and cook the meat yourself. Judging meat temperature is easier than frying an egg if you know what the meat should feel like when you touch it as it is cooking.

Any "professional" could have their meat stored for days. Might even be frozen (yuck). And there's no guarantee they, or their supplier, were utilizing basic safe food handling procedures in the process prior to cooking it.

Garbo cuts, as you put it, are not any more likely to carry diseases than prime cuts. It's all about the time from butchering to table. Killing a deer and eating its heart within minutes is WAY safer than eating venison heart cooked medium at a restaurant a day after it was killed.

I don't like it, but when I do eat it I prefer it burnt to death. (Exaggeration but more cooked is better than under in my opinion, mostly due to texture and the rubbery stuff)

I used to only have well done because my mom insisted that anything raw is bad but while I'm still used to it I'l prefer medium if given a choice since I like something that has a bit of texture instead of being beef flavoured boiled carrots.
