Wraps, chicken thigh pieces and lettuce
Marinade: soy sauce sake ginger garlic sesame oil beaten egg cornflour Hot sauce: Onion Apple Sugar Cayenne pepper Turmeric (because why not) Tomato paste Marinate chicken thighs, drop in medium temperature oil. Take out and rest. Drop back in high temperature oil to crispify. Serve in a wrap of hot sauce and lettuce. traditionally there's no sesame oil, sesame oil flavor is too strong, and oil doesn't penetrate meats/poultry so there's no point in having it in the marinade.

Lessons learned - The mixture can't be too wet when trying to flour and you need to drop the chicken pieces into the hot oil rather than put them in the basket and lower that in.
