I plan to make a chicken sauce with pasta.

I'll make a stock from the chicken bones and a mirepoix of onion, carrots, garlic, parsley stems and some thyme.

Then a velout sauce with the stock as base with the added chicken, maybe add some heat with chili flakes and I'm wondering if I should add some finely diced red bell pepper to it as well. Then mix the sauce with pasta.

I can't make new topic atm so I'm posting it here.

It's chicken pasta sauce.

I made it from leftover chicken from yesterday.

Made a stock from the chicken bones, skin and stuff, with a mirepoix of carrots, onion, shallots, garlic, added some thyme and parsley to it as well, seasoned with salt and pepper.

Then made a velout sauce from the stock, mixed in chicken meat I deboned, added the pasta, mixed and then addded some roasted chili flakes for some heat and seasoned with some black pepper and salt.

Had bit of long red bell pepper as a side.

It was creamy and tasty as fuck.

Got 4 portions out of it, so have meals for 3 more days gonna freeze in.
