Gonna record my major choices and impressions here. Today is the 6 year anniversary of Skyrim being released.

Since I'm playing the Xbone Special Edition, I have access to mods. If you know of any mods that fix game issues or overall improve the gameplay experience, feel free to say so.

Lol, are there any major choices in this game? There's only really one that I can recall, and even that was entirely superficial.

Yes, the hired ones can die.

The ones important to the main story don't die, they just crawl and get back up. You can increase your skills by hitting them, but don't try to pickpocket.

Without mods, yeah, most can die. And they likely will when running into traps.

And then finding out through hours of play time that that's literally the only type of puzzle in the entire game.

Ugh now that Markarth was mentioned...

I got this ridiculous glitch wherein I could not pay off a bounty in that area, or even serve the jail time. The guards would approach me and the only option was to resist arrest and fight. Even using the console wouldn't help.
I did at least one or two quests by completely sneaking my way through the city to meet with the people and do the objectives. One of them was even in the palace area, and loyal to the jarl, and I had to sneak past the guards then find a quiet spot inside to wait until night time when the guy went to sleep to even talk to him (because initiating conversation with him while he slept meant that he would have a normal conversation with me instead of immediately reporting me to the guards). Crap was whack.

That was about the only exciting experience I had in the game.

Yes.

Also, save your dragon bones and scales, you can craft them into the best, most badass weapons and armour in the game, though you have to max out your smithing skill to do it.

I don't know if it's the same way or not but it used to be traveling between towns and buying iron ore and ingots and just crafting iron daggers was a very reliable and quick way to level it.
Just keep in mind that enemies scale with your level, and it doesn't differentiate between combat levels and trade / crafting levels, so if you rush to level up something like smithing, you might make the game harder for yourself.

Save all the metal ores, ingots, and animal pelts and hides you find, and smith them into shit you want to use as you go along and sell the rest of what you make. It makes it a little easier on you to do it as you find the stuff, rather than letting it collect and doing a huge run all at once and gaining like 8 levels from just smithing. However, running around in a fully improved suit of dragonbone armour and weapons is worth far more than 8 levels in terms of power.

If you have one of the editions that has all the dlc, save some of your metals for smithing building components. You don't have to shell out too much gold to build all three of the Hearthfire homes if you do a bunch of the work yourself, and it's conveniently good for leveling smithing making all the nails, hinges, locks, etc. Carry a pickaxe with you so you can always mine ore seams

Lockpicks, Soul Gems, and ingredients.
Sometimes they have something hard to find for a quest, but you can usually forge better armor or swords.

Enchantmented weapons are really good, because you can rip the enchantment off and learn how to put it on weapons. You could forge a dagger, enchant it, and sell it for a lot.

I'm assuming the junk is just for decorating your house or something. Not really useful.

Meh I wouldn't worry about that.
1 - Raising your speech level will "unbalance" your character and make the game artificially more difficult for no reason, unless you're trying to roleplay that (but there's no... embedded roleplaying mechanics so it shouldn't make a difference).
2 - You'll get more than enough gold if you're looting all containers and selling junk between dungeon delves.

leveling up lock picking just makes the lockpicking minigame easier, which if you just save scum makes it useless since the minigame itself isn't hard at all.
