It's a Thai omelette laab salad.

It's an omelette that I had oyster sauce in, cooked in oil then cut up, let it become room temp, then cut up to mix with the salad before adding the dressing.

Salad is, mint, cilantro, green onion, lemongrass, shallot, cucumber.
Added to that is roasted chili flakes, toasted rice powder that I had kaffir lime leaves in.

Dressing is lime juice and fish sauce.

It was amazingly fresh and tasty.

It's great, has a fresh sour salty and sweet flavor to it with a nice heat.

The magic lies in the laab flavors from the toasted rice powder and mint.

I think I meant luke warm, basically let it cool so it's not hot when you add it to the salad so it won't wilt the herbs.

It's already cooked, there is no risk for bacteria to build up so quick anyway.

You could make the omelette first, then let it cool while you prepare the salad it should be cool enough when done.
