Lately I've been really considering getting a cat but I've never had one before, just dogs. How hard is it to train a cat to use the litter box and not to tear shit up and shit like that?

Cats will pretty much instinctively use a litter box. Just set it down in the litter box. If you catch it going anywhere else, pick it up and put it in the litter box. Very easy.

Kinda in the same boat, but more along the lines of teaching it boundaries, like not going into the kitchen, or jumping on top of the tables where food is served.

Cats will figure it out themselves pretty much. Make sure the size of the box is comfortable for the size of the cat.
Get a scratching post. You could also trim their claws a little, if they're indoor only cats. But they'll probably still scratch stuff eventually. --- walk like thunder ... Copied to Clipboard!

They teach themselves stuff. Mine have taught themselves to play fetch, and open all the doors and cabinets. Cant keep them out of anything anymore.
