One of the best parts of sauteed potatoes (from boiled ones) is the crunchy bits you get.

Now instead of getting them at random, take couple of pieces of potatoes and cut them up to small bits. When you start to cook the potatoes in the pan in olive oil, start with the bits first, just before they start to change color add the potatoes.

This will yield nicely golden brown sauteed potatoes with some extra crips here and there giving you a nice crunch of texture and that sweet caramilization umami flavor from the crispy bits.

Of course, season with salt and pepper, but also had just a dash of sugar to the potatoes to help with the caramilization.

Yeah, but that's to get into the fried area, but yea it works but personally I think it disturbs the flavor a bit
