Current Events > Dark Souls III min/max topic. What gear should I be using?

Endurance: 20
Vitality: 16
Strength: 30
Dexterity: 12
Intelligence: 9
Faith: 9
Luck: 7

Right now I have the Fire Gem Longsword +5, Knights Shield +3, and some fashion souls armor. (Herald Helm, Drang Chest, Fallen Trousers, idk the gauntlets)

I can smash in PvE but I'm doing terribly in PvP because my damage output isn't that great for heavy hitting enemies.

I just finished Cathedral and am 3/4ths of the way done with Farron's Keep. What should I start experimenting with, where should I put my soul levels?
