I bought ffx/x2 remaster on my Vita last night so I could play it at work. It was on sale. I imported an old file that I had 132 hours in from my ps3. All celestial weapons, full grids with everyone, monster arena completely finished, etc. I am using the expert grid.

Anyway, today I maxed luck on tidus, wakka, khimari, and Yuna. All at 255. Took me about 6 hours or so. I just destroyed earth eater over and over again with attack reels.

Is it necessary to even raise their evasion stat at this point? Cause I'm gonna run out of nodes here quick

Pretty sure Luck is accuracy AND evasion.

It's possible on default grid but I can't say if it's possible in the expert grid

Oh, fun fact. Even at max stats for everyone, wakka has a slight teeny bit higher accuracy that's tied in to his weapon.

But as stated, it's only relevant to the dark ixion battle outside of NSG runs.

How much grinding for clear spheres is needed to do all this?

IIRC an arena creation can drop up to 4 of them so... Assume 80% of the default board needs to go. Multiplication with the amount of nodes and you can figure it out.
