I've not watched the last few seasons and I decided to watch from the start to get back into it. I've also been reading the book, so it's somewhat fresh on my mind. I'm only one the first episode, but they do a complete 180 on Catelyn. In the show, she does the stereotypical wife thing, begging her husband not to leave her and her kids. In the book, it's Ned who doesn't want to go and Catelyn telling him that he has to; first because he can't reject the honor that Robert has offered and later because it'll let Ned protect the king and find Jon Arryn's murderer.

They even go so far as to take one of the lines that Ned said in the book and have Catelyn say it in the show: "My brother and father rode south at the demand of a king once."

They also make Robert look smarter by having him explain why the Dothraki could be a threat.
