The hydrogen would replace itself. Really, given time a lot of this would eventually revert back to normal. There'd be a lot more radiation for a while and we'd all die though.

Like Iron-56 would become Zinc-56 would would keep beta decaying until it is Iron-56 again.

Heavier elements would be rather interesting due the the massive amounts of protons they'd now have.
