The games listed as BC at https://en.m.wikipedia.org/wiki/List_of_Game_Boy_Color_games should be what you are looking for.

Quite a lot of GBC games were made to be backwards-compatible.
Pokémon Gold and Silver, for example.

In fact as a not-totally-accurate rule of thumb you can look for Game Boy cartridges that weren't grey or clear.
The grey cartridges were made for black-and-white Game Boys, while the clear ones with no notch in the corner are only for GBC.
I've found most other cartridges (in my limited experience) actually do have a lot more colour on the GBC (even if they don't use the full palette).

Some of the GameBoy games released after the GBC are labelled as DX versions. These versions usually have a programmed, fuller color palette when played on a GBC. One of the first games I bought after I got my GBC was Legend of Zelda: Link's Awakening DX. It had numerous colors and that were pre-programmed (as opposed to being applied by the GBC to the monochrome palette of regular GameBoy games). It even featured a new "color dungeon" not found in the original version of the game. Color was important to solving the puzzles and advancing through the dungeon.

I remember there being other such DX games. I don't know if this label was only applied to colorized remakes/updates, or if it was used for original games as well.

Black carts are the ones for both, so you can play on the old gameboys and the GBC.

That game did colour in one of the worst possible ways. Changing towns made the entire screen change colour. It didn't really add colour, more like it just said "instead of everything being green, we'll make everything blue in this town, red in this town, and yellow in this town".

The only area they put effort into was the HP bar.
