Chefs who think they make some dish that is universally good are full of themselves. People who think you should apreciate a menu item exactly as it is traditionally served are full of themselves. If I want to add a stipulation like "no caesar sauce" to my chicken ceasar soft taco, there is nothing wrong with that. If I want my steak well done, there is nothing wrong with that. If I don't want the fancy sauce that some Italian place drizzles over their fancy menu item, that's okay too.
