You have to realize at this point that the number one motivation for anybody to go to a new job is for the pay and benefits.

Like, I'm gonna need to know how much y'all are paying me before I commit to you.

This is the primary reason. Often time the interviewer doesn't determine your pay solely so they don't want to quote you something. They know the market pay just like you do though so that is not the time to negotiate

It makes it sound like you want the job just for the money. And while that's a truth for most people you still have to BS it like most aspects of interviews.

I've had employers outright state near the beginning that they were only going to pay from x to y, no lower or higher.

I respect that because it lets both parties know immediately whether they are wasting each others time.

I find the good places to work have the interview ask the question up front or don't mind when you ask about pay.

The ones that want to dance around it are being sketch. Or not answer. Most interviewers should know what they can afford to pay a person or they aren't doing their job.

It's not the first thing you ask of course.

In some fields it's pretty normal unfortunately. If you can't talk about it at interview though, that would suggest that what they're offering is inadequate.
