Whenever I refer to Thai Green Curry recipes this is an essential ingredient, but I'm looking up Thai Red right now and it's conspicuously missing.

I wouldn't put it in red curry it doesn't go right with the flavor. For red curry I usually put either potatoes or eggplant and okra. It's a better flavor and compliments the red curry quite well. Also I cut the tomatoes for this curry in big chunks for a nice flavor
