That mostly comes down to ignorance or laziness. People see white and black as colors because they either don't know that they're technically a hue, or they just don't care.

As for atheists answering the "What religion are you?" question with "Atheist", that's more arrogance than anything. The answer if you're atheist or agnostic the answer is the same to that question, which is "None" The only difference between the two people is that while agnostics simply believe there isn't enough proof for religions to be followed, atheists specifically choose to oppose religion as a whole by straight up disbelieving in any kind of god.

It would be more accurate to say that atheism is actually the opposite of a religion.
