Pretty delicious. I mixed milk in to make it extra fluffy and topped it with shredded cheddar cheese and swiss cheese... I'll definitely do this again.

I don't put cheese on pancakes. I put cheese on the eggs, but I cooked them like you would do pancake mix.

This, except putting milk in the egg makes the egg too soft to fold without breaking.

Did you scramble or let them sit and then flip?

I put the eggs in a bowl, added milk, and stirred it up with a fork until it was pretty consistent. Then I poured it into the pan and just let it cook on medium low heat. No need to flip. The heat will penetrate the egg enough to cook it so that it all solidifies. Just gotta be patient.

Mixed eggs with milk, panfried, with cheese on top. An omelette you didn't fold.

No, sunny side up is when you just crack the egg and drop it in the pan and let it cook and it comes out like this:

cG2h1De

I mixed up eggs and milk in a bowl, stirred until it was a consistent mixture, and then poured it into the pan and let it cook.

Again, no need to flip it because the heat penetrates the egg enough to cook it thoroughly without flipping. The only reason you flip a pancake is because the top doesn't cook properly unless you flip it.

Stop adding milk to eggs! Gordan Ramsey is going to come find you like Krampus and kill you.

Milk dilutes the taste of the eggs. It also screws with the texture, leaving the eggs slightly rubbery. There is 100% no reason to put milk or cream in eggs to scramble them. More tips:

- Don't season the eggs until the end if you want fluffy eggs
- Don't mess with the eggs too much in the pan (you seem to already know this)
- Don't pre-mix it in a bowl. Drop it in the pan and let it cook a little before mixing it up with your utensil.

Not talking about scrambling them, Ash. Egg pancake!

Gordon doesn't know everything, besides he put creme fraiche in his scrambled eggs like..um.

When I make omelette I have just a tiny splash of cream in the mixture, makes it a bit more fluffier and creamy. But you are right with the other stuff.

Altho, there is one type of omelette I also love, it can be dangerous if you have eggs that can get you sick if eaten raw. But you take like 3-4 eggs. Then beat them like crazy until a foam builds on top. Then you put that in a heated pan with butter, season. Let it cook on medium, medium low until the most of the egg is cooked. Then you fold it over. The result is a nice omelette that has a nice egg foam in the center.

Thank you, my man!

I eat a lot of eggs and spent probably more time than I should reading how to make perfect eggs.

I can only eat eggs as an omelet, my go to being a khai jiaw (Thai omelet). I can't eat eggs if the yolk is a prominent feature. I can eat regular scrambled eggs but prefer not to.

That's actually just eggs fraiche. A type of scrambled eggs.

The deal with milk is it can easily overcook the egg and it alters the texture and flavor of the egg. You don't need milk to make it fluffy. You want fluffy eggs:

- You CAN use an electric mixer to froth up the eggs before it goes into the pan, but it will cook super fast
- Don't put salt on the eggs until close to the end

Milk is more for flavor, and just a splash, like 1-2 teaspoons. I prfer to use cream instead.
