I'm thinking I might not need to be fighting this boss right now. I'm in the 1st dungeon; the one related to Yuki right at the beginning. After beating it I found an optional boss by going back a couple days later.

Thing is, I'm level 15 and he 1-2 shots every character I have lol. This can't be right. It's such an extreme difficulty jump.

Can I? I mean I know Kanji is the dungeon after this. Doesn't it replace it? Like once I start that can I ever go back to Yuki's dungeon?

No all of the dungeons can be revisited by talking to the whichever party member the dungeon involved

if only there was some website, where gamers could ask frequently asked questions, and other games would answer. Maybe even some really cool users could like, write up guides, that are free to use. Even do some that are spoiler free for people who just want tips but not have the plot spoiled.

But i guess an idea like that would only be popular 10 years ago
