the rest of the Star Trek universe? From the Alderaan Easter Egg to the aliens that aren't just humans with a few extra bumps on their faces, the whole thing feels like its really going at a Star Wars angle, was that intentional or just me noticing?

I've never read anything about that being intentional, no, and I've read preeeetty much every interview out there, heh.
It just goes for a more serialized, dramatic, character-driven storytelling focus as the years go by. That's its main thrust. The earlier seasons are formative, I guess, but there weren't any Star Wars inspirations beyond a few jokes here and there.

Ah, you'll still be in the muck of lesser DS9 (which is basically trying to be TNG lite) for a while yet. But if you're already enjoying the show to any extent, you'll probably love it later on.
Beware: "Move Along Home" (episode 10 of the first season) is like, the worst episode in the series, easily.
