And what exactly would I be getting say from a $120 one instead of a $500 one? Would the higher priced ones be worth it? (money isn't a problem for me, I'm just looking for the best deal).

Wacom is the best brand but as far as the specifics I never really looked at that price range (I wanted a Cintiq [still wacom]) which is really expensive because it has a screen.

I'm so used to drawing on paper, with pen and pencil, but I need to get with the times.

Instead of the tablet being just like a proxy for your screen where you can't see what you're actually drawing on (don't worry you don't actually need the screen), it is like it's own computer screen. It is basically a separate monitor that's a tablet.
