the other day i made a good pasta e fa gioli (lol gamefaqs censoring) soup.

• heat 2 tbps olive oil in a large saucepan over medium heat
• add 1 diced: onion, carrot, celery rib and cook until onion is golden (~8m)
• add 2 large, minced garlic cloves, stir, cook 1m
• add can of diced tomatoes, 2 cans of rinsed great northern beans and gently mash the beans with the back of spoon
• add 2c vegetable broth, bring to a simmer, reduce heat to low and wait ~5m
• add 4oz dried, small pasta (like macaroni) and took until pasta is tender (~7-8m)
• add 1/4 cup grated Romano cheese, add 2 tbps chopped parsley
• if soup is too thin, add additional broth
• salt and pepper to taste

makes 4 servings. yum yum.

it's awesome! nice and hearty from the beans + pasta (and a complete protein!) with a nice mix of veggies. i fell in love with it when i went to Italy back in the mid 00s. Olive Garden actually has a decent one.
