before covid i was working in an office and going out to lunch every day. expensive, yes, but i got a good meal and it was nice to leave the office for 1.5 hours (my boss was always with me, so i didn't get dinged or anything).

once covid hit my office started WFH and i had to come up with something to eat for lunch at home. since i didn't want to cook every single day, i wanted something quick and easy for lunch, so i settled on deli meat sandwiches. i ate a turkey sandwich every work day for like ... 18 months.

then i started getting sick of the expensive (~$11/pound for the good stuff) meat loaded with preservatives, nitrates and sodium so i sought an alternative. i wanted something healthy, but also quick and easy. i decided on making veggie burritos.

i saute some onions, bell peppers, black beans and corn in some olive oil for a few minutes, then add some garlic and spices at the end. while i chop up the veggies and measure stuff, i start cooking 1cup of rice. after everything is cooked, i mix it all together and then put it in a container i leave in the fridge. each day for lunch i heat up a portion of the veggie burrito mix, throw it on a cooked tortilla, top it with some salsa and cheese, then stir and wrap. add an apple on the side and i got myself a pretty solid meal for like $7.50 / week.

Nice. I started making my own burritos too about 5 months ago.

Dices white onion,refried beans,cheese and salsa. I've dropped 10lbs, feel better and like you said. It's like only $10 a week.

that's another benefit i failed to mention in the OP. i stay trim as fuck. i used to hover around 147-153 and now its more like 145-148

I've been making chicken for lunch for years now. I used to do full chickens but have switched to breasts. I put some garlic salt on them before baking for an hour at 350. Then I put it together with veggies and some beans and olives into a bowl.

You really have to be OK with having the same exact thing everyday but it's pretty cost effective and healthy. I usually douse the whole thing with hot sauce as well. When I was going into an office my lunch consisted of that, plus a small thing of yogurt with granola, a tuna pouch, and some kind of fruit like an apple/orange, and a hard boiled egg. This was while I was lifting weights more though so I cut out a bunch of the protein from it during covid when I wasn't going to the gym anymore.

that sounds pretty solid. do you add any rice at all? i love rice + beans for a cheap but complete protein. rice is also super cheap filler.

I did use rice for a while but took it out when I was trying to cut weight. The rice def helped me feel more full.

yeah the nitrates and preseratives and all that nasty processed junk was a major motivator in ditching the deli meat. the cost savings is just icing on the cake.
