Modified this a bit. Didn't have pecans, and cut back on the ginger. Oh and I cut out the sugar and served it with a dollop of vanilla bean greek yogurt.

Normally when I make oatmeal for the kids I just mash a banana and throw some cinnamon, flax, and chia in it, then stir it all in. Sometimes blueberries or raspberries, depending on what the kids want.

We were out of bananas this morning so I looked up oatmeal recipes and came across this. Not something I'll make often, but it's fun for a breakfast treat once in a while.
