The ending hasn't been altered at all

It's just that due to multiplayer not being included they've changed how legacy and side quest completion effects galatic readiness.

So you need to do all the sidequests and play ME1/2 to get the "best" ending.

The "best" ending is still just the same shit in different colors.

A new EA blog post reveals those who want to the better endings after Mass Effect 3'sfinale will have to either successfully complete virtually everything in the game or play through the entire trilogy in order to improve their Galactic Readiness to the fullest amount in Mass Effect Legendary Edition. Playing through the first two games and carrying progress over will give players an easier time achieving one of the better endings, essentially meaning that the more content that's completed, the better chance players have at saving the galaxy. Most importantly, the Mass Effect 3: Extended Cut's ending is now the default ending, which overwrote the original Mass Effect 3 ending after it stirred immense controversy.

except it's not, it's changing the galaxy at war table doo hickie since multiplayer is removed. As a result if you only play ME3 it will now be much harder to get the 'best' ending. It's still the same extended cut ending.

Galaxy at War Rebalancing
As Commander Shepard, youre tasked with the hardest mission of all: defeating the Reapers and saving the galaxy from annihilation. This comes to a head in Mass Effect 3 when the galaxy unites, but your choices from across the trilogy lead you there and determine who fights at your side. The Galaxy at War feature puts you in the heart of the Reaper War from the Normandys Combat Information Center, which has been rebalanced in the Legendary Edition. For example, Galactic Readiness is no longer impacted by external factors that arent part of the collection, like multiplayer or the old companion app for ME3. However, that doesnt necessarily mean defeating the Reapers will be easy.

The more content you complete across the entire trilogy, the more likely youll be prepared for the final fights in its conclusion. If you only play Mass Effect 3, youll have to do just about every option available in the game to be eligible for an ending that doesnt result in massive galactic losses. Playing the first two games and carrying over your progress is the most reliable way to get good results in the final hours of the Reaper War. For comparison, if you previously played ME3 with the Extended Cut (which included Galactic Readiness rebalancing), fully preparing for the final fight will be more difficult to achieve in the Legendary Edition. And on that note: the Extended Cut ending is now the games default finale.
However, readying your intergalactic armies will be made a bit easier by a number of critical bug fixes and backendimprovements made to the Paragon-Renegade system in ME2; we resolved some legacy issues that inhibited accurate reputation stats from being displayed and outright prevented certain dialogue options from being selectable when they should have been. So... how is this different from before
Before if you played multiplayer your "Galatic Readiness" raised from default 50% anywhere to 100%

Effectively doubling your war assests, Which means the "better" endings were possible without doing sidequests.

In fact in the original original release of the game, it was literally impossible to get enough War Assests to get the Shepard lives cutscene at 50% readiness, and thus required multiplayer

One of hte things they fixed in the extended cut

It's a pain in the ass, sure, but I did all of that every time I played the trilogy anyway. If you're gonna get fully entrenched into the games and go for 100% completion, it's not that big of an ask.

But saying that - the reason this is such a pain in the ass is because they took out ME3 co-op.

For those not in the know: Mass Effect 3 multiplayer matches would raise your galactic readiness levels, since you were playing foot soldiers fighting battles on planets around the galaxy. If you maintained a high galactic readiness level in the multiplayer, you had a better chance of getting the best endings.

By taking out the multiplayer component, there's no way to directly affect the galactic readiness meter - unless they tie the galactic readiness meter directly to your trilogy completion or something.
