Depends on the thickness cut of the meats. If its standard thinly sliced prepackaged meats, then usually 4 - 5 slices.

Double the serving size whatever that may be, since the calories per serving meat are usually around 60-80, and I want to eat an amount of protein commiserate to the carbs I'm eating in the bread, which is often around 100 calories per slice.

That's usually not a problem. Serving size for deli meats often hit around two ounces, and a 170 calorie serving of a single chicken breast is 4oz. Most steak restaurants in America start their serving sizes at 8oz. Believe me, we're fine. And were sodium a problem, like you're on dialysis or something, we've several levers we can use to control and tailor sodium. We can watch what we buy from the deli counter and make sure we're buying freshly prepared meats that don't need preservatives (often containing more sodium). We can watch the other things we serve it, leaning into fresh vegetables (tomatoes, avocado, sprouts) for texture and taste and cutting out condiments like mayo (though mustard is usually fine). Depends on the type/slice and my mood at the time. Usually 3-4 will suffice. Rather save the rest for equal vs 5, 6, 2 scenarios and then lament at how past me screwed myself.
It also becomes slightly bothersome if it's either too meat or cheese heavy, then you wind up with bread and a chunk of meat/cheese glued to the roof of your mouth and you gotta act like an idiot to get the offending material off and sometimes you piss someone off during said actions and can't respond/talk correctly because you're doing it and then they get all mad at how you're mocking them.
