I've wanted to play it again ever since I played the demo, but I would be neglecting the other games in my backlog for a long time. I'm not sure I'm ready for that kind of commitment.

At 50, 60 and 70. 50 and 60 mostly just so you can have enough item level to actually just even enter the instances. Though, if you have some friends willing to help, they can completely negate that requirement outright.Though, I think 50 and 60 hand out gear now so you can get through them without having to do excess gear grinding.

When you get to lvl 50 you should start farming the Allagan Tomestones of Poetics currency for (Augmented) Ironworks gears. It's all purpose and the highest item level at lvl 50 and you could probably level up to 56 before other gear becomes stronger. Prior to 50, whatever gear you get from dungeons or quests is fine.

At level 60 there's the (Augmented) Shire gear that takes the role of Ironworks.
