If they're Catholic, any of the Holy Days of Obligation (non-Sunday mandatory church days): Feast of the Immaculate Conception, All Saints Day, Christmas, Feast of the Assumption, and Solemnity of Mary. Good Friday and Ash Wednesday are also popular church days, but in fact are not required.
Of course, there's also the Sunday obligation. EDIT: Quite a few people attend church on Thanksgiving as well. It's not a church holiday in any way, it just reflects the idea that it's God we're giving thanks to on that day. -- SubDeity wants to vote for Calvin Coolidge.
