Have you tried doing Soul Level 1 runs? Those can be pretty hard, especially if you are also going for the no deaths achievement at the same time.

Sekiro is considered the hardest one, though its battle mechanics are def less souls like.

Funny because Sekiro is the only Souls like game I fully beaten.

Limitation runs are boring to me. I want it to be difficult while being optimal, that even the best builds can't make the game trivial.

I mean, people make Pokemon harder by limiting themselves to a challenge run. Though The Indigo Disk itself had people with competitive teams struggle a fair bit as well.
