I only recently learned this when trying to make my own teriyaki. Kept wondering why mine was so damn salty leading me to just add more mirin or water to the mixture than what was required.

Dark soy sauce is definitely stronger tasting imo. Just less salty

I've actually started buying legit Chinese soy sauce instead of just Japanese soy sauce (Kikkoman is the most widely sold it seems)
