She would actually love this but I want us to do it somewhat "right" so we don't regret it down the road one day

Do a backyard wedding. Or if you dont have enough property find a place you could book an outdoor wedding (depending on location/wedding date/typical weather). Keep it along the lines of an outdoor country wedding. Simple, regular clothes attire, then have a backyard BBQ. Either a friend or relative thats capable of doing a big family BBQ or ultimately cater it.

The best weddings Ive ever been to have basically been backyard country weddings with a simple setup. Even went to ones where everyone literally sat on hay bales. Small, simple, bride and groom were in jeans and dress shirts and they had a killer BBQ set up with a band. Best wedding ever and they only spent money on food and the band.

But where Im from people have a lot of property, nice country settings, barns, all kinds of stuff to facilitate this kind of thing without getting a venue.

There's enough room for the wedding where I live but there's dog shit and not much parking room

But yeah that's what I would want. Outside in the country, quiet

I think a small event venue with a nice view could work. My cousin got married a few years ago at this little place in LA. He had maybe 50-60 guests and it was nice. The wedding itself was on this balcony area outside, overlooking the city and the reception took place inside the actual event hall. I'm sure most cities have some small place you can rent out without things being too big.
