I know the stupid ass owner/founder try to mess with his supplier in a video I saw a while back then the pepper supplier made their own siracha I think. Maybe that's why the original siracha sauce taste like homeless version of the original

Not just you, I remembered reading this on it recently: https://digitaldiscipline.blog/post/739882588901113856/why-sriracha-was-impossible-to-find-and-now-tastes

TL;DR: they changed the peppers used in the sauce due to some supply chain/money issues back in 2020

Allegedly the guys who produced the original peppers have their own brand of sriracha that's a lot more similar to the original: https://underwoodranches.com/product/dragon-sriracha/ I'd like to try it, but they don't ship to me

it shot up to like $15 for a bottle or something for a bit and then they changed the peppers in the rooster sauce to make it affordable

I buy Sky Valley Sriracha now. Its not exactly the old huy fong sriracha but its the closest i could find thats readily available.
Better than the current Huy Fong sriracha imo

I bought the original one for $4. I might as well use it all up then buy Underwood's siracha. Hopefully it's exactly like that one Asian one

It absolutely is different now, it's not as good. It's largely due to a change in jalapeno pepper variety. Huy Fong done fucked up when they tried to screw their old supplier, I'm not sure they're going to ever come back to having a condiment that will compete with ketchup and mustard like Sriracha was starting to.

Apparently the Underwood Farms sriracha is pretty close to the old Huy Fong sriracha.

Bottom line for those who don't have access:

The Underwood sriracha immediately jumped out at us as the more acidic of the pair, while the Huy Fong had a sweeter note. The latter seemed more redolent of garlic, too. The new brand, perhaps because of its pedigree it is owned by a pepper farmer, after all seemed to more prominently showcase its star ingredient, and we agreed that it packed slightly more heat and displayed a deeper flavor than the original.
