Just watched a couple "tips" videos and there is seemingly so much shit going on in this game

Social links, multiple personas, combining personas, getting a job, taking tests, going to the velvet room, the calendar, the moon, exams, hangouts with party members, the ability to rewind in the remake, etc.

I just feel like there is no way I will be able to keep track of what the hell is going on enough to actually finish or enjoy the game.

I mean they added a lot of new social interactions. But it's less overwhelming than any Elder Scrolls game.

It probably seems more overwhelming than it is because you watched a tips video with no other context, the game explains all of this stuff just fine. You split your time between exploring dungeons/jrpg battles and hanging out with people and doing real world stuff. If you enjoy social sims and jrpg combat, then you'll probably enjoy it. Unless you dislike anime in general, then some anime tropes will probably turn you off from the game.

Its really not bad when youre playing, and accept that you probably wont get 100% on a first play through.

Is it a lot shorter than P5R? Because I don't have time to play games like that multiple times

I think P5R is a bit longer, but the lengths are comparable.

I'm coming at this from playing P3 FES twice, not reload though.

Royal is definitely the longest persona by far. Vanilla took me over 100, and royal closer to 120 hours. 4 golden on the other hand, took me about 80, which is still very long, but not absurdly so in my opinion

Im not sure how much reload is adding that would affect the time it takes, so i imagine itll be at a similar 75-80 hour mark.

I imagine they gradually introduce that stuff so it's not overwhelming by the end.

Well go play Yakuza 7 and Infinite Wealth then. Ironically despite the MC's being middle age, I thought it was easier to get into and it's also turn based rpg owned by Sega

Also you can just ignore shit. I think I'll get Dodonko Island to 1 star at best, maybe.

.As for Persona 3R. I am sure you can just play on normal or some lower difficulty even and just coast through the game plus for tests if you are afraid of getting the answer wrong for whatever reason you can probably still poll the audience online and the answer with the most votes is always right.

You'd think somehow there would be an effort to mislead someone on an obvious answer.

There's a 100% guide available already apparently so that's neat.

As long as you're not going for the 100% on your 1st playthrough, it's not that bad. Just primarily focus on the social links of your party members and raising your social stats while sprinkling in the other links when you don't have anything else to do. It becomes far easier to get all the social links on NG+ runs since you don't have to be concerned about social stats on NG+ (since they carry over), giving you more than enough time to get all of them done.

Likewise, there's no need to stress out over the personas either. Like 75% of the time, you're probably only going to be using 3 or so of them heavily at a time, with the rest just being there because they can attack a weakness you or your current party otherwise can't hit or because they might have 1 skill you use before going back to your main ones the next turn. It won't take long for you to recognize which skills are great skills to keep around, so when fusing personas you can easily just focus on passing those particular skills on to the new persona (and you can always just register then buy back a persona if you aren't able to carry over all the skills you want to keep).

Can't speak for the rest of the stuff since I'm not sure how P3R handles some things (like I know in P5R you could cheat on tests/exams with the online features by seeing what everyone else picked and just pick that, though IDK if that's the case here), but those 1st 2 things are just some general things I've picked up on when I went through P3P, P4G, and P5R about a year ago.
