Goldeneye is probably the best one to watch for someone who's never watched Bond. Skyfall is good but not really a great representation of what a Bond film is. I would say Connery's movies probably capture what a Bond film is the best, but they might be too dated for some people. Diamonds has a really dumb plot and Connery is half asleep through most of it, and YOLT has long boring stretches where nothing interesting happens scattered throughout it.
