Because they contain chitin and your body can't break it down so unless you cook them you get negligible amounts of nutrients out of it.

Huh, didnt know that either. Thankfully, I almost always cook them. They go great with steak.

I think the last time I had a raw one was 5+ years ago.

Cant recommend cooking them with steak enough. They soak up the steak juices, its so good.

I knew this only because I watched a lot of survivorman.

One of his routine tips was to never bother searching for mushrooms if you're stuck in the bush without food since you'll just burn calories and not get anything back from them.

Humans can digest chitin, we're just not particularly good at it. Humans can still access some of the nutritional value of mushrooms, they're just not a good source of calories, especially raw. That's not unusual since cooking most foods make it easier to access their nutrients.

raw hamburger is saying you're talkin mess

nah jk but cooking most vegetables also start cooking their nutrients away. Broccoli should really be eaten raw or lightly steamed at best; you cook them too much and you start breaking things down. For stuff like Iron you don't have to worry about it but for other things, yes, hence I stopped cooking a lot of vegetables not being ingested for calories, like potatoes still get cooked.

I can only imagine that cooking would destroy many nutrients. This is desirable for many meats, as they can contain harmful bacteria. Lightly roasted veggies (especially peppers) are delicious though. Cooking can help your body break down the food a little more, similar to chewing.

Depends on how you cook em. A fry up is definitely diminishing nutritional value; cooking them in a stew or soup is fine because it's going to go into the broth. Carrots cooking is good because they're a hard vegetable. Considering how often people boil/fry vegetables, it's something to take into account.
