I would like to imagine Bibendum himself is going to these restaurants and sampling the food, but, I'm just curious why the entire culinary would said that the Michelin company determined what was the best.

Oh yeah, it's just it feels kinda dumb that they're held in such a crazy high esteem, and chefs are given pedigree for how many stars they have. From a tire companies food guide.

You're kinda overlooking the evolution. Where something starts can be a far cry from where it ends up. If the tradition had just started, it might not have been held in esteem, but it's been building up for a century.

No body really 'decided' so much as it just happened that way. I doubt either the company or any of the places at the start expected it to be much more than a quick cash grab and what-not.
